Mango Cardamom Chia Pudding


This easy to make decadent pudding will leave you satisfied with every spoonful!


I was wanting to make an in season fruit pudding using chia seeds for a different desert, I had just bought a ripe mango and thought of combining the two into an exotic flavoured treat. It worked!! 😋

So here is the recipe

- 80 grams of Chia seeds
- 400 ml's of liquid total (I used 150 ml of coconut milk and 250 ml of oat milk) you can also use any nut milk too.
- 1 drop of Cardamom food grade essential oil www.mydoterra.com/shantistar
- 1 teaspoon of Vanilla powder
- 3 teaspoons of Maple syrup, or a little more if you like things more sweeter
- 1 mango peeled
- Pinch of salt

I have a Thermomix but if you don't you can use a food processor, just whizz it up until everything is smooth and pureed.

Pour into 4 or 5 small bowls and refrigerate until set (around 2 hours)
